A rich, creamy cheesecake infused with vibrant, tropical passion fruit flavor. While you can always buy passion fruit syrup pre-made to keep things easy, making it from scratch using fresh passion fruit juice adds an incredible homemade touch!

Ingredients
For the Crust:

1.5 cups graham cracker crumbs (or your favorite cookie/biscuit crumbs)

24 oz cream cheese, softened to room temperature

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs (at room temperature)

1/2 cup sour cream

1/3 cup freshly extracted passion fruit juice (processed from fresh passion fruit)
For the Passion Fruit Syrup & Topping:

Passion fruit syrup (Note: You can easily buy passion fruit syrup pre-made to save time—there’s nothing wrong with buying stuff pre-made to make things easier! However, this version features syrup made completely from scratch using fresh juice).

Fresh passion fruit pulp or seeds (optional, for garnish)

Prep the Oven and Pan: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan lightly.

Make the Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, 2 tablespoons of sugar, and a pinch of salt until well combined. Press the mixture firmly into the bottom and slightly up the sides of the springform pan. Bake for 8–10 minutes, then let cool.

Mix the Cheesecake Filling: In a large bowl (or stand mixer), beat the softened cream cheese and 1 cup of sugar until smooth and creamy. Mix in the vanilla extract.

Add Wet Ingredients: Add the eggs one at a time, beating on low speed just until combined (do not overmix). Stir in the sour cream and the fresh passion fruit juice until silky and smooth.

Bake: Pour the filling over the cooled crust. Bake for about 50–60 minutes until the edges are set and the center still has a slight wobble. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour to prevent cracking.

Chill: Chill the cheesecake in the refrigerator for at least 4 hours (or overnight) until completely set.

Garnish & Serve: Drizzle your passion fruit syrup (homemade or store-bought) generously over the top of the chilled cheesecake, add fresh passion fruit seeds or pulp for texture if desired, slice, and serve!
