Prep time: 10 minutes | Cook time: 20 minutes | Servings: 4
Ingredients
-
1.5 lbs chicken breast, cut into bite-sized pieces
-
1 jar Trader Joe’s Yellow Curry Sauce
-
1 medium yellow onion, diced
-
2 to 3 cloves garlic, minced
-
1 tbsp fresh ginger, grated
-
1 to 2 cups vegetables of your choice (such as potatoes, bell peppers, or peas)
-
1 to 2 tbsp cooking oil
-
Salt and pepper (to taste)
-
Fresh cilantro (optional, for garnish)
-
Cooked rice (for serving)
Instructions
-
Sauté the Aromatics: Heat the cooking oil in a large skillet or Dutch oven over medium heat. Add the diced onion and cook until soft and translucent (about 5 minutes). Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
-
Brown the Chicken: Add the bite-sized chicken pieces to the skillet, seasoning with a pinch of salt and pepper. Cook until the outside of the chicken is lightly browned and nearly cooked through (about 5 minutes).
-
Add Veggies & Sauce: Toss in your choice of vegetables, then pour the entire jar of Trader Joe’s Yellow Curry Sauce right into the pan. Stir well to coat everything.
-
Simmer: Bring the mixture to a gentle bubble, then reduce the heat to low. Let it simmer uncovered for 10 to 15 minutes, stirring occasionally, until the vegetables are tender and the chicken is fully cooked.
-
Serve: Spoon the warm curry over a bed of freshly cooked rice, and garnish with chopped fresh cilantro if desired.
