Yellow Chicken Curry (Using Trader Joe’s Sauce)

A quick, warm, and aromatic chicken curry that takes advantage of your favorite jarred sauce for an easy weeknight meal.

Ingredients

  • 1.5 lbs chicken breast, cut into bite-sized pieces

  • 1 jar Trader Joe’s Yellow Curry Sauce

  • 1 medium yellow onion, diced

  • 2 to 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 to 2 cups vegetables of your choice (such as potatoes, bell peppers, or peas)

  • 1 to 2 tbsp cooking oil

  • Salt and pepper (to taste)

  • Fresh cilantro (optional, for garnish)

  • Cooked rice (for serving)


Instructions

  1. Sauté the Aromatics: Heat the cooking oil in a large skillet or Dutch oven over medium heat. Add the diced onion and cook until soft and translucent (about 5 minutes). Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

  2. Brown the Chicken: Add the bite-sized chicken pieces to the skillet, seasoning with a pinch of salt and pepper. Cook until the outside of the chicken is lightly browned and nearly cooked through (about 5 minutes).

  3. Add Veggies & Sauce: Toss in your choice of vegetables, then pour the entire jar of Trader Joe’s Yellow Curry Sauce right into the pan. Stir well to coat everything.

  4. Simmer: Bring the mixture to a gentle bubble, then reduce the heat to low. Let it simmer uncovered for 10 to 15 minutes, stirring occasionally, until the vegetables are tender and the chicken is fully cooked.

  5. Serve: Spoon the warm curry over a bed of freshly cooked rice, and garnish with chopped fresh cilantro if desired.
